Awadhi Delight: Royal Galouti Kebabs Fit for a King

Succulent galouti kebabs, the royalty of Lucknow's kebab scene, are here to sweep you off your feet! This recipe crafts a mouthwatering blend of finely ground minced mutton, aromatic spices, and a touch of Awadhi magic. Get ready to embark on a culinary journey fit for a king!

Ingredients:

  • 350g finely ground keema (minced mutton)
  • 1/2 tbsp salt
  • 1 1/2 tbsp raw papaya paste
  • 1/2 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 green cardamom pods
  • 4 dried red chillies
  • 3 cloves
  • 1 black cardamom pod (seeds only)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp mace powder
  • 1/2 tsp nutmeg powder
  • 3 tbsp roasted cashew nuts
  • 3 tbsp roasted charoli (chironji)
  • 2 medium onions, fried till crispy
  • 1/2 tsp garam masala
  • 1/2 tsp black pepper powder
  • 3 tbsp roasted gram flour
  • 1 tbsp thick cream
  • 1 tbsp kewra water
  • 1/2 peeled onion for smoking
  • 5-6 tbsp ghee for smoking and frying
  • 3 fresh green chillies for garnish

Method:

  1. Marinate keema with salt and raw papaya paste for 2 hours.
  2. Prepare dry masala powder and wet masala paste using Mixer Grinder
  3. Mix marinated keema with wet masala paste, then smoke the mixture for 30 mins.
  4. Shape into 18-20 kebabs and fry until golden brown in hot ghee.
  5. Garnish with green chillies and onion slices. Serve hot with your favorite condiment!
